So yesterday I got home at about 9:30 from a long day of work and class and found myself CRAVING edamame. Josh introduced me to this lovely little snack (basically soy beans in pods) and all day yesterday all I could think about was getting home to enjoy some of this delightful food! (You should really try it if you haven't!)
My roommate was laughing at me when I got home because I was seriously so happy eating the edamame. I was grinning ear to ear, just so excited to be sitting in my kitchen, enjoying each of the little pods (lightly coated in salt!) And when I say excited, I mean really excited. After every bite I couldn't stop myself from exclaiming, "These are amazing!". (I think Katy got the point after about the 10th one). Just imagine my face after I read a really funny Fresh Ink card, or looking at a bizarre picture of a llama, or when I start talking about something I'm really passionate about. That's how excited I was...about soy bean pods! What is going on?
I guess the reason that I write all of that, is because as I was thinking about it today, it made me realize that I hope that I am not getting so busy, so overwhelmed, so crazy with things to accomplish on my to-do list, that I miss out on the little joys in life. Whether that is being excited about something as insignificant as edamame, or being willing to stop and recognize a lonely freshman student who just needs someone to ask how he or she is doing, to remembering to recognize the amazing things people in my cohort are accomplishing in their assistantships, or taking the time at the end of the day to really stop, breath, and reflect on why God has me here, instead of just accomplishing things and marking them off of my list.
Just a little challenge to myself...to recognize more of the edamame in my life!

You'll have to send me some of these edamame pods. Even if they get stuck in customs, it would be a fun story of me trying to explain what they are. Can anyone tell me how to say "pod" in Spanish?

something to look forward to in colorado, boulder actually is edemame served at hapa on pearl street. you'll find the way they season it might just make you grin even more while enjoying it!
Well, all I know is that I don't dare tell your Dad - he'll sure think you're on drugs!! This 'edamame' will be right up there with orange hair!!
